Theory:
- Understand the impact on hydration/temperature and time control on starter
- Competition between bacteria and yeast activity
- Build up a strong stiff starter
- The gluten development of the starter
- How to "drive" your starter
- Impact of the flour/grain used on the starter (included Gluten-free grains)

1. Sourdough Brioche

- Socca - specialty from Southeast of France - spontaneous fermentation
- Sourdough Pan Bagnat - (an in between of shokupan and pompe a l'huile)
