Theory:

  1. Understand the impact on hydration/temperature and time control on starter
  2. Competition between bacteria and yeast activity
  3. Build up a strong stiff starter
  4. The gluten development of the starter
  5. How to "drive" your starter
  6. Impact of the flour/grain used on the starter (included Gluten-free grains)

Practice:

1. Sourdough Brioche

    • Laminated
    • Babka
    • Rolls (sweet or savory)

2. Gluten-free Sourdough bread

    • Socca - specialty from Southeast of France - spontaneous fermentation
    • Sourdough Pan Bagnat - (an in between of shokupan and pompe a l'huile)
