Workshop Overview:
This workshop introduces the fundamentals of beverage fermentation through hands-on preparation of simple, safe, and flavorful fermented drinks. Participants will learn techniques they can confidently repeat at home.

  • What is Fermentation?
  • Microorganisms Involved
  • Fermentation vs. Spoilage
  • Key Variables in Fermentation; Sugar, Temperature, Time, Oxygen
  • Non-Alcoholic vs. Alcoholic Beverage

       3. Discussion of Naturally fermented drinks

  • Kombucha
  • Ginger bug soda
  • Wild soda
  • Tepache
  • and other fermented drinks

       4. Ingredients and equipment

  • Water
  • Sugar
  • Fruits, vegetables, herbs and spices
  • Starter culture
  • Jars, bottles and strainer
  • Proper cleaning and sanitation

       5. Hands-on brewing session

  • Kombucha (1F)
  • Ginger bug

       6. Degustation

  • Tasting of different fermented beverages paired with some fermented food items
